Chef Michael Gray’s culinary love began when he was around eight or nine, creating Southern comfort food in the kitchen with his grandmother. 

“From a young age I can remember cooking holiday meals with her. It was our moment to bond and talk. In my family the kitchen was the heart of the family,” Gray recalled. “We talked, laughed, and cried in the kitchen. The kitchen was what connected us.

Whenever a loved one passed away, we cooked. When someone got married, we cooked. New additions to the family, we cooked. Becoming a chef to me was an extension of that connection with friends and others that I had been doing my entire life.”

After moving to San Francisco in 2002 to study at the prestigious California Culinary Academy of Le Cordon Bleu, Gray’s star began to rise early on as he gained notoriety and attention and awards for his unique and creative take on old and new confections.

Soon after Gray launched Enchanted Nibbles Catering out of a small apartment catering everything from Bar Mitzvahs to weddings and graduations.

“My grandmother gave me the strength to become the person I am today and stand in my truth,” Gray says. “She always told me to go after my dream and do what I loved. She said ‘don’t let anyone get in your way. No one can make you do anything, and don’t let anyone take anything away from you.’ I struggled to understand the meaning behind those words. But I understand them now and live by them today.”
In 2019, Chef Gray fulfilled his life-long dream with the launch of Fat Boys, an LA-based gourmet food truck, serving unique and innovative takes on old classics from burgers to good ‘ol Southern delights. But why a food truck and not go the traditional route? He says it’s all about that connection he remembers as a child.

“I want the ability to be able to go to different places and meet different people. I truly wanted to be able to pull up to the beach and watch the sunset and serve food,” he says.

“The part that I love about cooking is that moment you look up and see people laughing and talking. All the worries of the world melt away for a second in time. The outside world stops, and at that moment you have a very precious second in time that will pass by in a blink of an eye and could be lost if you don’t stop to honor and enjoy it.”

Giving Back
Away from the kitchen, Chef Gray, who has nearly a decade of sobriety under his belt, works with local drug and alcohol rehabilitation centers to help those who are struggling to get back on their feet and find their footing, often speaking to groups about his own journey to recovery. 

Chef Gray also sits on the board of directors of Together Helping Others Inc, a New York-based 501c3 nonprofit for the homeless and hungry. A portion of proceeds from Fat Boys is donated monthly to the NPO, as well as other charities, to feed and clothe those in need.
